Our first fresh carrots of the season are here, coming in from Groundwork Organics in the the Willamette Valley! It'll be a little longer before we see bunched carrots from our Central Oregon farmers, so grab a bunch or two to tide you over.
Storage tip: remove the greens (which are edible - carrot top pesto is a fav) and store the carrots separately. They'll hold especially well in a perforated or slightly open plastic bag or wrapped in a damp (but not wet) towel. The greens will do best with a lightly damp paper towel in a plastic bag - it just keeps them from drying out and getting wilty, and by not totally saturating the paper towel, you let it also absorb excess moisture.
